OTTAWA -- A "stabaholic" hooker who shanked a chef with his own kitchen knife on New Year's Day 2011 pleaded guilty to manslaughter Tuesday.

Jennifer Bird, 30, stuck a four-inch blade into Simon Hubbard's chest, piercing his heart and leaving him bleeding from defensive wounds sustained while trying to save himself.

It was Bird's fourth stabbing -- she once gave her own mother a taste of steel -- but it was the first time she'd killed.

"When in doubt, she wants to stab her way out," said Crown prosecutor Paul Attia, who also called her a "stabaholic."

Hubbard, 43, managed to make his way into the alley near his basement apartment before collapsing and dying.

Attia said Bird deserved 14 years in prison for the "senseless and brutal" killing, especially given her history of solving problems at knifepoint.

Despite her record, she is not incorrigible, defence lawyer Jeffrey Langevin said.

"It's not a record that would lead you to the inevitable conclusion that Ms. Bird is outside the scope of rehabilitation," he said. "She's still a young woman."

But Hubbard's family and friends -- about a dozen of whom attended the sentencing hearing -- weren't as forgiving.

"Never forget that you killed, a kind and gentle man," his sister, Jane Hubbard, told the court in a victim impact statement.

She stared straight at the blond Bird slumping in a corner of the prisoner's dock.

"I want Simon's name to forever ring in your ears, Jennifer Bird. I can not forgive her for being a coward and for knowingly leaving him mortally wounded -- knowingly leaving him to die."
